Slow-Roasted Green Beans and Tomatoes

 



OK, this one makes 6 servings. 


Ingredients:

1-1.5 pounds fresh green beans, ends trimmed but left whole

1 pound multi-colored cherry or grape tomatoes

10 cloves garlic

1 teaspoon kosher salt

1/2 teaspoon freshly ground black pepper

3 tablespoons extra-virgin olive oil


Heat oven to 325 degrees. Coat a large rimmed sheet pan with nonstick spray. Place beans, tomatoes and garlic on tray. Season with salt and pepper, drizzle with olive oil and toss to coat.

Roast for 45 minutes to 1 hour, tossing about halfway through to make sure beans are roasting evenly. Continue roasting until garlic is caramelized and softened, and tomatoes are soft and starting to fall apart.
